Ricotta cheese, blue berries and raspberries....hyam, hyam as Furbie used to say! kids love this too - so you may have to put them in a headlock so you can get some - or do as I do, wait till they are at school.....
1. Whisk together the egg, milk and sugar substitute. Soak the bread in the egg mixture. Drain the excess liquid.
2. Heat the cooking spray in a non-stick pan. Cook the bread, one slice at a time, until each side is set and the bread is light brown.
3. Place the French toast on a plate and top with ricotta and fruit.
4. Garnish with cinnamon.
