Eggy bread for breakfast – or French toast if your posh!!

Ricotta cheese, blue berries and raspberries....hyam, hyam as Furbie used to say!  kids love this too - so you may have to put them in a headlock so you can get some - or do as I do, wait till they are at school.....

  • 1 serving of semi-skimmed milk (100ml or 4fl oz)
  • 1 tsp of sugar substitute
  • 3 slices of wholemeal bread
  • 2 ozs. of ricotta
  • 1 pinch of cinnamon
  • 2 eggs
  • 4 ozs. of blueberries etc
  • 1 tsp of olive oil
  • 1. Whisk together the egg, milk and sugar substitute. Soak the bread in the egg mixture. Drain the excess liquid.
    2. Heat the cooking spray in a non-stick pan. Cook the bread, one slice at a time, until each side is set and the bread is light brown.
    3. Place the French toast on a plate and top with ricotta and fruit.
    4. Garnish with cinnamon.
