Oatmeal Cookies

Great for eating on the move (not on the treadmill silly!), popping into the kids lunch boxes or after along walk or run with a nice cup of tea, but my main incentive for this recipe is that they are brill a a tasty post-workout/near collapse treat.

Makes 20 cookies.

  • 4 tbsp marg or butter
  • 75g/2.5oz brown sugar
  • 2 eggs
  • 1 tsp vanilla essence
  • 150g/5oz porridge oats
  • 85g/3oz white flour
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • 60g/2oz raisins
  1. Mix together the marg/butter and sugar until light and fluffy the beat in the eggs and vanilla essence.
  2. Add the reamaining ingredients and mix until combine to a fairly stiff mixture
  3. Place spoonfuls on a lightly oiled baling sheet.
  4. Bake @ 180C/350F/gas mark 4 for approx 10 mins until golden.
