DS2 made Spicy Lentil soup the other day which meant we had a ton of lentils left over!! Have a go with these and serve with tomato salsa and Greek yogurt! Served wrapped in an iceberg lettuce leave instead of a bun....
1 tbsp oil
1 large onion, finely chopped
6oz Red lentils
1pt Veg Stock
1 Curry Powder
1 dash of salt and fresh ground black pepper
4oz fresh breadcrumbs
A little vegetable oil, for brushing
- Heat the oil in a large pan and cook the onion until soft, stir in the curry powder and cook for a further 2 minutes.
- Add the lentils and the stock. Bring to the boil and simmer for 20-25 minutes.
- Allow to cook slightly then add breadcrumbs, season with salt and pepper and shape into burgers (4), brush lightly with oil and place on a baking tray. Pop in the oven for 7-10 minutes (200C/400F/Gas6) until golden and firm.
- Serve!!
